Not really. Some tourist business' will play it by ear after the new year, some will close regardless. Planning ahead is not really a "thing" in Albufeira. The town has a permanent population of 25k or so, and the winter long-stay retirees boost this between Jan and April, so there are still plenty of local bars and restaurants that will be open anyway. If you tell us where you are staying we might be able to point you in the direction of some of those places local to you?

Il Cappucino will be open for good value basic fare. The Yorkshire Tavern don't usually take their break until Feb and Coconuts is all year round I think? Others more familiar with the area may have further suggestions.

Yes, Fat Cats re-opens 21st December. Was in Uzonj Saturday night which is further up Rua Dunfermline and would definitely recommend a meal in there. Tourist menu is €9.50 not including drink or couvert, unlike some which do include them for slightly more, lots of choice and very very good. Both me and OH had sea bass which comes full fish but requested filleting which was done no problem. Daughter had piri piri, which should and does come on the bone but she wanted the meat off the bone and again was obliged. All in all well worth it.
